Sustainable Agricultural Practices (Capstone) 10 Credits, Year Long Course, Dual Enrolled Shasta College
An introduction to the biological principles of plant growth and development. Ecosystem relationships will be covered with particular emphasis on succession, water cycle, mineral cycle, and energy flow. In addition to investigating modern production and marketing practices of agronomic crops, the impact of commercial crop production on mankind and the environment will be considered.

Advanced Hospitality & Food Service (Capstone) 10 Credits, Year-Long Class. This capstone course prepares students with food production, preparation, and service skills for employment in institutional, commercial, or independently owned food establishments or other food and hospitality industry occupations. Instruction includes topics such as planning, selecting, storing, purchasing, preparing, testing, serving, and selling of quality food and food products; nutritive values; safety and sanitation; use and care of commercial equipment; management of food establishments; cost and profitability analysis; side work and customer orders; and handling cash and credit transactions.
